  • 2 ½ cups all-purpose flour

  • 2 teaspoons baking powder

  • 1 teaspoon baking soda

  • 1 teaspoon ground cinnamon

  • ½ teaspoon ground nutmeg

  • ½ teaspoon ground ginger

  • ½ teaspoon salt

  • 4 large eggs

  • 1 ½ cups granulated sugar

  • 1 cup vegetable oil

  • ½ cup applesauce (or more oil)

  • 2 teaspoons vanilla extract

  • 3 cups finely grated carrots

  • 1 cup chopped walnuts or pecans (optional)

  • ½ cup raisins (optional)

  • 1 cup powdered sugar

  • 2–3 tablespoons milk or cream

  • ½ teaspoon vanilla extract

Directions

  • Preheat oven to 350°F (175°C). Grease and flour a 10-inch Bundt pan.
  • In a large bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, ginger, and salt.
  • In another bowl, beat eggs with sugar, oil, applesauce, and vanilla until well combined.
  • Gradually add dry ingredients to the wet mixture, stirring just until combined.
  • Fold in grated carrots, nuts, and raisins if using.
  • Pour batter into prepared Bundt pan and smooth the top.
  • Bake for 50–60 minutes, or until a toothpick inserted into the center comes out clean.
  • Let the cake cool in the pan for 15 minutes, then turn out onto a wire rack to cool completely.
  • For the glaze: Whisk together powdered sugar, milk, and vanilla until smooth. Drizzle over cooled cake.
