2 cups shredded rotisserie chicken
1 ½ cups shredded cheddar or Mexican blend cheese
1 can (10 oz) red enchilada sauce
6 small flour or corn tortillas
1/4 cup sour cream (optional, for filling or topping)

1 tsp cumin or taco seasoning (optional)
Salt and pepper, to taste
Directions
- Preheat oven to 375°F (190°C).
- In a bowl, mix shredded chicken with ½ cup cheese, a few tablespoons of enchilada sauce, and cumin or seasoning if using.
- Fill each tortilla with the chicken mixture, roll tightly, and place seam-side down in a greased baking dish.
- Pour remaining enchilada sauce over the top and sprinkle with remaining cheese.
- Cover with foil and bake for 15 minutes. Remove foil and bake another 10 minutes until bubbly and golden.
