Ingredients

• 1 block firm tofu

• 1/2 pound ground pork or chicken (or any protein of your choice)

• 1/4 cup chopped mushrooms (shiitake or any variety)

• 2 tbsp chopped green onions

• 1 tbsp soy sauce

• 1 tsp sesame oil

• 1 tbsp cornstarch

• 4 cups chicken or vegetable broth

• 1 tbsp ginger (minced)

• Salt and pepper to taste

Directions

• Prepare the Tofu Balls:
  Press the tofu to remove excess water. Then, mash the tofu with a fork until smooth.
  In a bowl, mix the mashed tofu, ground meat, chopped mushrooms, green onions, soy sauce, sesame oil, cornstarch, salt, and pepper.
  Shape the mixture into small balls, about the size of a golf ball. Set them aside.
• Cook the Soup:
  In a large pot, bring the chicken or vegetable broth to a simmer.
  Add minced ginger and any vegetables you’re using (bok choy or spinach work well) to the pot.
  Carefully drop the tofu balls into the simmering broth. Cook for 10-15 minutes, or until the tofu balls float to the top and are cooked through.
• Serve:
  Taste the soup and adjust seasoning with more soy sauce or salt as needed.
  Ladle the soup into bowls, ensuring each serving has a good amount of tofu balls and vegetables.
