Ingredients

  • 1 lb boneless chicken breast, diced

  • 1 lb andouille sausage, sliced

  • 1 can (28 oz) diced tomatoes with juice

  • 1 cup each: chopped onion, bell pepper, celery

  • 2 cups chicken broth

  • 2 tsp oregano, 2 tsp basil, 1 tsp thyme

  • ½ tsp cayenne pepper, 1 tsp hot sauce

  • 2 bay leaves

  • 1 lb shrimp, peeled and deveined

  • 2 cups cooked white rice

Directions

  • Add chicken, sausage, tomatoes, onion, bell pepper, celery, broth, and spices to the slow cooker. Stir well.
  • Cook on Low for 7-8 hours or High for 3-4 hours.
