4 large carrots (peeled and chopped)
2 potatoes (peeled and diced)
1 onion (chopped)
4 cloves garlic (minced)
3 cups beef broth or water
2 tablespoons olive oil
1 teaspoon dried thyme
1 teaspoon rosemary
Salt and pepper to taste
1 bay leaf
Optional: 1 cup of peas or beans for added texture
Directions
- Heat olive oil in a large pot over medium heat.
- Add the meat and brown it on all sides, about 5–7 minutes.
- Remove the meat and set it aside.
- In the same pot, add the onions and garlic and sauté until softened, about 3 minutes.
- Add the carrots, potatoes, and herbs (thyme, rosemary, bay leaf).
- Pour in the broth or water, bringing the mixture to a boil.
- Reduce the heat, cover, and simmer for 1–1.5 hours until the meat is tender and the vegetables are cooked through.
- Add salt and pepper to taste. If you’re adding peas or beans, stir them in during the last 10 minutes of cooking.
- Serve hot with crusty bread or as a standalone dish.

- You can use different meats based on preference, such as pork or chicken.
