Directions
- Prepare the crust:
Preheat your oven to 180°C (350°F).
Crush the digestive biscuits into fine crumbs using a food processor or by placing them in a zip-lock bag and crushing with a rolling pin.
Mix the crushed biscuits with the melted butter until the mixture resembles wet sand.
Press this mixture into the base of a pie dish or tart pan, forming an even crust. Bake for 10 minutes, then let it cool. - 2. Prepare the filling:
In a mixing bowl, whip the double cream with icing sugar until it forms soft peaks.
In another bowl, combine the mascarpone cheese, coffee liqueur, espresso, and vanilla extract. Mix well until smooth.
Gently fold the whipped cream into the mascarpone mixture until fully combined. - 3. Assemble the pie:
Pour the creamy filling over the cooled crust, spreading it evenly.
