1 block firm tofu
1/2 pound ground pork or chicken (or any protein of your choice)
1/4 cup chopped mushrooms (shiitake or any variety)
2 tbsp chopped green onions
1 tbsp soy sauce
1 tsp sesame oil
1 tbsp cornstarch
4 cups chicken or vegetable broth
1 tbsp ginger (minced)
Salt and pepper to taste
Directions
- Prepare the Tofu Balls:
Press the tofu to remove excess water. Then, mash the tofu with a fork until smooth.
In a bowl, mix the mashed tofu, ground meat, chopped mushrooms, green onions, soy sauce, sesame oil, cornstarch, salt, and pepper.
Shape the mixture into small balls, about the size of a golf ball. Set them aside. - Cook the Soup:
In a large pot, bring the chicken or vegetable broth to a simmer.
Add minced ginger and any vegetables you’re using (bok choy or spinach work well) to the pot.
