300g shrimp (peeled and deveined)
4 large flour tortillas
1 cup cooked rice (Mexican or cilantro-lime rice)
½ cup black beans (drained and rinsed)
½ cup corn (optional)
1 cup shredded lettuce
½ cup diced tomatoes
½ cup shredded cheese (cheddar or Monterey Jack)
¼ cup sour cream or Greek yogurt
1 tbsp lime juice
1 tbsp olive oil
2 cloves garlic (minced)
1 tsp chili powder
½ tsp cumin
½ tsp smoked paprika
Salt and pepper to taste
Directions
