1 (10 oz / ~280g) package frozen chopped spinach, thawed and drained
1 cup breadcrumbs (plain or seasoned)
½ cup grated Parmesan cheese
1 cup shredded mozzarella or cheddar cheese
3 eggs
2 tbsp butter, melted
½ tsp garlic powder
Salt and pepper to taste
Directions
- Preheat oven to 180°C (350°F). Line a baking sheet with parchment paper.
- Squeeze all excess moisture out of the spinach.
- In a large bowl, mix spinach, breadcrumbs, cheeses, eggs, melted butter, garlic powder, salt, and pepper until well combined.
- Form mixture into small balls (about 1 inch). Place on prepared sheet.
- Bake for 20–25 minutes or until golden and set.
- Serve warm with your favorite dip or sauce.
