Ingredients

  • 2 tbsp oil or butter

  • 1 small onion, finely chopped

  • 2 cloves garlic, minced

  • 1 tsp grated ginger

  • 1½ tbsp curry powder (adjust to taste)

  • ½ tsp ground cumin

  • ½ tsp paprika or chili powder (optional for heat)

  • 2 tbsp tomato paste or ½ cup crushed tomatoes

  • 1 cup coconut milk or heavy cream

  • ½ cup vegetable or chicken broth

  • Salt to taste

  • Fresh cilantro for garnish (optional)

Directions

  • Heat oil or butter in a saucepan over medium heat.
  • Sauté chopped onion until soft and translucent, about 5 minutes.
  • Add garlic and ginger; cook for 1–2 minutes until fragrant.
  • Stir in curry powder, cumin, and paprika. Cook for 1 minute to toast the spices.
  • Mix in tomato paste and cook for another 1–2 minutes.
  • Pour in coconut milk and broth. Stir well and bring to a simmer.
  • Let it cook for 8–10 minutes until slightly thickened.
  • Season with salt and adjust spices to taste.
  • Blend for a smoother sauce (optional), and garnish with fresh cilantro if desired.

Notes

  • For a thicker sauce, simmer longer or reduce broth slightly.
  • Add sautéed veggies, chickpeas, paneer, tofu, or cooked chicken for a full meal.
  • Store in the fridge for up to 4 days or freeze for later use.
