Ingredients

  • 2 cups shredded rotisserie chicken

  • 1 ½ cups shredded cheddar or Mexican blend cheese

  • 1 can (10 oz) red enchilada sauce

  • 6 small flour or corn tortillas

  • 1/4 cup sour cream (optional, for filling or topping)

  • 1/4 cup chopped cilantro or green onions (for garnish)

  • 1 tsp cumin or taco seasoning (optional)

  • Salt and pepper, to taste

Directions

  • Preheat oven to 375°F (190°C).
  • In a bowl, mix shredded chicken with ½ cup cheese, a few tablespoons of enchilada sauce, and cumin or seasoning if using.
  • Fill each tortilla with the chicken mixture, roll tightly, and place seam-side down in a greased baking dish.
  • Pour remaining enchilada sauce over the top and sprinkle with remaining cheese.
  • Cover with foil and bake for 15 minutes. Remove foil and bake another 10 minutes until bubbly and golden.
  • Garnish with sour cream, cilantro, or green onions. Serve warm.

Notes

  • Use green enchilada sauce for a milder flavor.
  • Add black beans, corn, or sautéed peppers for extra texture and nutrition.
