Ingredients

  • 2 large spinach or herb tortillas

  • 2 large lettuce leaves (romaine or green leaf)

  • 2 oz sliced mozzarella cheese

  • 2/3 cup shredded cooked chicken breast

  • 1 cucumber, peeled

  • 1/2 avocado, thinly sliced

  • Thin rings of sweet onion (about 1 slice)

  • 2 tablespoons Green Goddess dressing (store-bought or homemade)

  • 2 green onion tops or chives, for tying (optional)

  • Grape tomatoes and extra cucumber spears, for serving

Directions

  • Lay one tortilla flat and place a lettuce leaf on half of it.
  • Arrange half of the mozzarella slice, 1/3 cup chicken, and half the cucumber (you can use shaved ribbons or thin spears).
  • Add avocado slices and a few onion rings.
  • Drizzle with 1 tablespoon of Green Goddess dressing.
  • Roll up the tortilla tightly, starting from the filled edge, leaving the opposite edge clean so it seals better.
  • Wrap in a paper towel to help hold its shape. Repeat with the second tortilla.
  • To serve, tie with a green onion or chive if you like. Serve with extra grape tomatoes and cucumber spears on the side.
