2 medium potatoes, boiled and mashed
½ cup green peas (boiled or frozen)
1 small onion, finely chopped
1 green chili, minced (optional)
1 tsp ginger, grated
1 tsp cumin seeds
½ tsp turmeric
1 tsp garam masala
1 tsp coriander powder
Salt, to taste
1 tbsp oil
Fresh coriander, chopped
Directions
- Heat oil in a pan. Add cumin seeds and let them sizzle.
- Add onion, green chili, and ginger. Sauté until soft.
- Mix in turmeric, coriander powder, garam masala, and salt.
- Add mashed potatoes and peas. Stir well.
- Cook for 2–3 minutes, then stir in fresh coriander. Let cool.
- Take one wrapper and form a cone. Fill with 1–2 tbsp of potato mixture.
- Seal the edges with flour paste. Repeat with remaining filling.
- Preheat the air fryer to 375°F (190°C).
- Lightly brush or spray samosas with oil.
- Place in the air fryer basket in a single layer.
- Cook for 10–12 minutes, flipping halfway, until golden and crisp.
Notes
- You can use puff pastry or phyllo dough for a flakier texture.
- Add paneer or minced meat for a protein boost.
- Serve with mint chutney, tamarind sauce, or ketchup.
