Ingredients

  • 6–8 medium lemons, halved

  • ⅔ cup granulated sugar (adjust to taste)

  • 4–5 cups cold water

  • Ice, for serving

  • Extra lemon slices, for garnish (optional)

  • Fresh mint, for garnish (optional)

Directions

  • Preheat oven to 400°F (200°C).
  • Place halved lemons cut side up on a baking sheet lined with parchment paper.
  • Roast for 20–25 minutes, until the edges are browned and caramelized.
  • Let lemons cool slightly, then juice them into a pitcher, straining out seeds.
  • Add sugar to the warm juice and stir until dissolved.
  • Add cold water and stir well. Taste and adjust sweetness or water as needed.
  • Serve over ice with lemon slices and fresh mint if desired

Notes

  • Roasting intensifies flavor — use ripe, juicy lemons for best results.
  • For an extra kick, add a splash of sparkling water before serving.
