1 can (400g) white beans or cannellini beans (drained and rinsed)
100g pancetta or bacon (diced)
2 large eggs
1/2 cup grated Parmesan cheese
2 tbsp olive oil
2 cloves garlic (minced)
Salt and black pepper to taste
Fresh parsley (optional, for garnish)
Directions
- Heat olive oil in a pan over medium heat. Add the diced pancetta or bacon and cook until crispy and golden brown.
- Remove the pancetta from the pan and set it aside. In the same pan, add the minced garlic and sauté for 1-2 minutes until fragrant.
- Add the beans to the pan and stir to combine with the garlic and any leftover pancetta bits. Cook for about 5 minutes, stirring occasionally.
- In a bowl, whisk the eggs and grated Parmesan cheese together, then season with salt and pepper.
- Remove the pan from heat and slowly pour the egg mixture over the beans, stirring quickly to create a creamy sauce. The residual heat will cook the eggs without scrambling them.
- Add the cooked pancetta back to the pan and stir to combine.
