Ingredients

  • 1 can (400g) white beans or cannellini beans (drained and rinsed)

  • 100g pancetta or bacon (diced)

  • 2 large eggs

  • 1/2 cup grated Parmesan cheese

  • 2 tbsp olive oil

  • 2 cloves garlic (minced)

  • Salt and black pepper to taste

  • Fresh parsley (optional, for garnish)

Directions

  • Heat olive oil in a pan over medium heat. Add the diced pancetta or bacon and cook until crispy and golden brown.
  • Remove the pancetta from the pan and set it aside. In the same pan, add the minced garlic and sauté for 1-2 minutes until fragrant.
  • Add the beans to the pan and stir to combine with the garlic and any leftover pancetta bits. Cook for about 5 minutes, stirring occasionally.
  • In a bowl, whisk the eggs and grated Parmesan cheese together, then season with salt and pepper.
  • Remove the pan from heat and slowly pour the egg mixture over the beans, stirring quickly to create a creamy sauce. The residual heat will cook the eggs without scrambling them.
  • Add the cooked pancetta back to the pan and stir to combine.
  • Serve the Carbonara Beans with a garnish of fresh parsley and extra Parmesan, if desired.
