Ingredients

  • 4 cups russet potatoes, peeled and cubed

  • 2 cups cooked chicken, diced (rotisserie chicken works great)

  • 6 slices bacon, cooked and crumbled

  • 1 cup shredded cheddar cheese

  • ½ cup sour cream

  • ½ cup ranch dressing

  • 2 tbsp olive oil

  • 1 tsp garlic powder

  • Salt and pepper, to taste

  • 2 tbsp chopped green onions (optional, for garnish)

Directions

  • Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish with olive oil or non-stick spray.
  • Boil the cubed potatoes in salted water until fork-tender (10–12 minutes), then drain and set aside.
  • In a large bowl, combine the cooked potatoes, diced chicken, crumbled bacon, garlic powder, and salt and pepper.
  • Stir in sour cream, ranch dressing, and half of the shredded cheddar cheese. Mix until well combined.
  • Pour the mixture into the prepared baking dish and top with the remaining cheddar cheese.
  • Bake for 25–30 minutes, or until the top is golden and bubbly.
  • Garnish with chopped green onions and serve warm.

Notes

  • You can use any leftover chicken or rotisserie chicken for a quicker prep.
  • For a creamier version, add more ranch dressing or sour cream.
  • Top with additional bacon or a drizzle of ranch dressing for extra flavor.
