2 tbsp oil or butter
1 small onion, finely chopped
2 cloves garlic, minced
1 tsp grated ginger
1½ tbsp curry powder (adjust to taste)
½ tsp ground cumin
½ tsp paprika or chili powder (optional for heat)
2 tbsp tomato paste or ½ cup crushed tomatoes
1 cup coconut milk or heavy cream
½ cup vegetable or chicken broth
Salt to taste
Fresh cilantro for garnish (optional)
Directions
- Heat oil or butter in a saucepan over medium heat.
- Sauté chopped onion until soft and translucent, about 5 minutes.
- Add garlic and ginger; cook for 1–2 minutes until fragrant.
- Stir in curry powder, cumin, and paprika. Cook for 1 minute to toast the spices.
- Mix in tomato paste and cook for another 1–2 minutes.
- Pour in coconut milk and broth. Stir well and bring to a simmer.
- Let it cook for 8–10 minutes until slightly thickened.
- Season with salt and adjust spices to taste.
- Blend for a smoother sauce (optional), and garnish with fresh cilantro if desired.
