1 ½ cups (300g) granulated sugar
½ cup (100g) brown sugar
3 large eggs
2 tsp vanilla extract
¾ cup (90g) cocoa powder
1 cup (125g) all-purpose flour
½ tsp salt
½ tsp baking powder
1 cup (170g) dark chocolate chunks
1 cup (150g) canned or fresh cherries, chopped (plus extra for garnish)
Directions
- Preheat oven to 350°F (175°C). Line an 8×8-inch (20×20 cm) baking pan with parchment paper.
- In a large bowl, whisk together melted butter, granulated sugar, and brown sugar until smooth.
- Add eggs one at a time, beating well after each addition. Stir in vanilla extract.
- Sift in cocoa powder, flour, salt, and baking powder. Mix until just combined.
- Fold in chocolate chunks and chopped cherries.
- Pour batter into the prepared pan and spread evenly. Bake for 30-35 minutes, or until a toothpick inserted in the center comes out with a few moist crumbs.
- Let the brownies cool completely in the pan.
