1 cup all-purpose flour
2 large eggs, beaten
1 cup grated Parmesan cheese
Zest of 2 lemons
2 tbsp olive oil
2 tbsp butter
Juice of 1 lemon
Fresh parsley, chopped (for garnish)
Directions
- Pound chicken breasts to even thickness, then season with salt and pepper.
- Set up three shallow dishes: one with flour, one with beaten eggs, and one with a mixture of Parmesan cheese and lemon zest.
- Dredge each chicken breast in flour, then egg, then Parmesan-lemon mixture, pressing to coat well.
- Heat olive oil and butter in a large skillet over medium heat.
- Cook chicken breasts 4–5 minutes per side until golden brown and cooked through.
- Remove chicken and set aside. Add lemon juice to the pan, scraping up any browned bits.
