Ingredients

  • 500g boneless, skinless chicken breast (cut into cubes)

  • 2 tbsp olive oil

  • 1 tbsp lemon juice

  • 2 tbsp Greek yogurt

  • 2 tsp dried oregano

  • 1 tsp garlic powder

  • 1 tsp onion powder

  • Salt and black pepper (to taste)

  • 1 tbsp fresh parsley (chopped, for garnish)

  • 1 tbsp fresh lemon (sliced, for garnish)

  • Wooden or metal skewers (for grilling)

Directions

  • Prepare the marinade: In a bowl, whisk together olive oil, lemon juice, Greek yogurt, oregano, garlic powder, onion powder, salt, and pepper.
  • Marinate the chicken: Add the chicken cubes to the marinade and mix until evenly coated. Cover and refrigerate for at least 30 minutes, preferably 1-2 hours for more flavor.
  • Prepare the grill: Preheat your grill to medium-high heat. If using wooden skewers, soak them in water for 10-15 minutes to prevent burning.
  • Assemble the kabobs: Thread the marinated chicken cubes onto the skewers, ensuring they are evenly spaced.
  • Grill the kabobs: Place the skewers on the grill and cook for 5-7 minutes per side, or until the chicken is fully cooked and has an internal temperature of 165°F (75°C).
  • Garnish and serve: Once grilled, garnish the kabobs with fresh parsley and lemon slices. Serve with pita bread, a side salad, or tzatziki sauce.

Notes

  • Bone-in chicken can also be used, but it will require a longer grilling time.
