Ingredients

  • 1 lb boneless chicken breast or thighs, cut into bite-sized pieces

  • 2 tbsp fresh mint leaves, finely chopped

  • 1 tbsp cilantro, chopped (optional)

  • 3 cloves garlic, minced

  • 1-inch piece ginger, grated

  • 1 green chili, finely chopped (optional)

  • 2 tbsp plain yogurt

  • 1 tbsp lemon juice

  • ½ tsp turmeric powder

  • 1 tsp cumin powder

  • 1 tsp garam masala

  • ½ tsp salt (or to taste)

  • 2 tbsp olive oil or ghee

Directions

  • In a bowl, mix yogurt, lemon juice, turmeric, cumin, garam masala, salt, garlic, ginger, and green chili.
  • Add chicken pieces to the marinade and coat well. Let it sit for at least 30 minutes (or up to overnight for deeper flavor).
  • Heat oil or ghee in a pan over medium heat. Add marinated chicken and cook until golden brown and fully cooked (about 8-10 minutes).
  • Stir in chopped mint and cilantro, mixing well to coat the chicken with fresh herbs.
