  • 1 pack instant ramen noodles (discard seasoning)

  • 1 tbsp unsalted butter

  • 1 tbsp white or yellow miso paste

  • 1 tsp soy sauce

  • 1 clove garlic, minced

  • ½ tsp chili flakes or chili oil (optional)

  • ¼ cup reserved noodle water (or more as needed)

  • Green onions, sesame seeds, or soft-boiled egg (for topping)

Directions

  • Cook ramen noodles according to package instructions. Reserve ¼ cup of the cooking water before draining.
  • In a pan, melt butter over medium heat. Add garlic and sauté for 30 seconds.
  • Stir in miso paste and soy sauce, mixing to form a smooth sauce.
  • Add drained noodles and reserved noodle water. Toss until noodles are well coated and silky.
  • Add chili flakes or oil if desired.
  • Serve hot, topped with green onions, sesame seeds, or a soft-boiled egg.

Notes

  • White miso is milder and sweeter, perfect for this dish.
