Ingredients

  • 2 slices of crusty whole-grain or sourdough bread

  • 2 oz (50g) sharp cheddar cheese, sliced

  • 1 tbsp Branston pickle or apple chutney

  • 4-5 slices of cucumber

  • 2 slices of tomato

  • 2-3 leaves of crisp lettuce (romaine or butter lettuce)

  • 1 tsp whole grain mustard (optional)

  • 1 tbsp butter (softened, for spreading)

Directions

  • Spread butter on both slices of bread to prevent sogginess.
  • If using mustard, spread it on one side for an extra kick.
  • Spread the chutney or Branston pickle on one slice of bread.
  • Add the cheese slices evenly over the chutney.
  • Layer cucumber, tomato, and lettuce on top of the cheese.
  • Place the second slice of bread on top, press gently, and slice in half.
  • Serve immediately, or wrap in parchment paper for a packed lunch.
