Ingredients

  • 1 (10 oz / ~280g) package frozen chopped spinach, thawed and drained

  • 1 cup breadcrumbs (plain or seasoned)

  • ½ cup grated Parmesan cheese

  • 1 cup shredded mozzarella or cheddar cheese

  • 3 eggs

  • 2 tbsp butter, melted

  • ½ tsp garlic powder

  • Salt and pepper to taste

Directions

  • Preheat oven to 180°C (350°F). Line a baking sheet with parchment paper.
  • Squeeze all excess moisture out of the spinach.
  • In a large bowl, mix spinach, breadcrumbs, cheeses, eggs, melted butter, garlic powder, salt, and pepper until well combined.
  • Form mixture into small balls (about 1 inch). Place on prepared sheet.
  • Bake for 20–25 minutes or until golden and set.
  • Serve warm with your favorite dip or sauce.

Notes

  • Can be made ahead and reheated.
  • Freeze uncooked balls for later—bake straight from frozen.
  • Add a pinch of chili flakes for heat or herbs for extra flavor.
