Ingredients

  • 1 pound halibut fillet

  • 1 teaspoon coarse sea salt or kosher salt

  • 1 tablespoon minced fresh ginger

  • 3 tablespoons thinly sliced green onion

  • 1 tablespoon dark soy sauce

  • 1 tablespoon light soy sauce

  • 1 tablespoon peanut oil

  • 2 teaspoons toasted sesame oil

  • ¼ cup lightly packed fresh cilantro sprigs

Directions

  • Prepare the Fish:
    Pat the halibut fillet dry with paper towels. Rub both sides of the fillet with salt.
    Scatter the minced ginger over the top of the fish. Place the fillet into a heatproof ceramic dish.
  • Steam the Fish:
    Set up a bamboo steamer over a pot of gently boiling water. Place the dish with the fish into the steamer, cover, and steam for 10 to 12 minutes, or until the fish is cooked through.
  • Prepare the Sauce:
    Once the fish is cooked, pour out any accumulated water from the dish. Sprinkle the fish with thinly sliced green onions and drizzle both dark and light soy sauces over it.
  • Sear the Oil:
    Heat peanut oil and sesame oil in a small skillet over medium-high heat. Once the oil is hot and starts to smoke, carefully pour it over the fish fillet. This will make the green onions and water pop, creating a sizzling sound. Be cautious during this step.
  • Garnish and Serve:
    Garnish the fish with fresh cilantro sprigs and serve immediately with steamed rice.

  • This dish can be made with other firm fish fillets like cod, tilapia, or snapper if halibut isn’t available. Adjust steaming time depending on the thickness of the fish fillet. The hot oil poured over the fish adds a nice sizzle and flavor, so be cautious when handling it to avoid splattering.
