1 tbsp olive oil
1 small onion, finely chopped
2 garlic cloves, minced
1 can (400g) crushed tomatoes
1 tbsp tomato paste
1 tsp paprika
1 tsp dried oregano
Salt and pepper to taste
Fresh parsley for garnish (optional)
Directions
- Preheat oven to 375°F (190°C).
- Heat olive oil in a pan, sauté onion until soft. Add garlic and cook 1 minute.
- Stir in crushed tomatoes, tomato paste, paprika, oregano, salt, and pepper. Simmer for 5–10 minutes.
- Add butter beans and stir to coat. Transfer to a baking dish.
- Bake uncovered for 25–30 minutes, until thick and bubbly.
