3 tbsp mayonnaise
1–2 tsp chipotle peppers in adobo sauce, finely chopped (adjust to heat preference)
1 tsp Dijon mustard
Salt and black pepper, to taste
2–3 slices cooked bacon, crumbled
Optional: smoked paprika and chopped chives for garnish
Directions
- Hard boil the eggs: Place in a pot, cover with water, bring to a boil, then simmer for 9–10 minutes. Transfer to ice water to cool.
- Peel eggs and slice in half lengthwise. Remove yolks and place in a bowl.
- Mash yolks with mayo, chipotle, mustard, salt, and pepper until smooth.
- Spoon or pipe the mixture back into the egg whites.
- Top with crumbled bacon, and sprinkle with smoked paprika and chives if using.
- Serve chilled or at room temperature.
