• 1/2 pound ground pork

• 2 tbsp finely chopped green onions

• 1/4 cup shrimp (optional, finely chopped)

• 1 tbsp soy sauce

• 1 tsp sesame oil

• 1 tsp grated ginger

• 1/2 tsp white pepper

• Wonton wrappers (store-bought or homemade)

• 6 cups chicken or vegetable broth

• 2-3 cups bok choy or spinach

• 1 tbsp soy sauce (for the broth)

• Salt to taste

Directions

• Make the Filling:
  In a mixing bowl, combine ground pork, chopped shrimp (if using), green onions, soy sauce, sesame oil, ginger, and white pepper. Mix well until the filling becomes sticky and well-combined.
• Assemble the Wontons:
  Lay out the wonton wrappers on a clean surface. Place about 1 teaspoon of the filling in the center of each wrapper.
  Moisten the edges of the wrapper with water, fold it over the filling to form a triangle, and then bring the two corners together to seal the wonton.
• Prepare the Soup:
  In a large pot, bring the chicken or vegetable broth to a boil. Add 1 tablespoon of soy sauce to the broth for added flavor. Reduce the heat to a simmer.
• Cook the Wontons:
  Gently drop the wontons into the simmering broth. Let them cook for 5-7 minutes, or until the wontons float to the surface and the filling is cooked through.
• Add Vegetables:
  Add bok choy or spinach to the soup and cook for another 2-3 minutes, until the greens are tender
• Serve:
  Ladle the soup into bowls, ensuring each serving has wontons and vegetables. Garnish with fresh cilantro or green onions.

• Wonton Wrappers: If you’re using store-bought wonton wrappers, make sure to keep them covered with a damp cloth to prevent them from drying out.
