Originally a dish created during British rule in India, Jalfrezi refers to a style of cooking where vegetables or meat are stir-fried with spices and sauces. The word “Jalfrezi” itself means “hot-fry” or “stir-fry.” Veg Jalfrezi combines a variety of fresh vegetables like bell peppers, carrots, green beans, and tomatoes with Indian spices, resulting in a dish that’s both nutritious and flavorful.

Veg Jalfrezi is a popular Indian stir-fry dish made with assorted vegetables, tangy tomatoes, and aromatic spices. It’s a versatile, healthy option that pairs well with both rice and Indian breads like naan and roti.

Ingredients

  • FOR STIR-FRYING:
  • 1 tbsp butter

  • ½ onion, petals

  • 10 beans, chopped

  • ½ carrot, chopped

  • ½ tomato, sliced & deseed

  • 3 tbsp peas

  • 5 baby corn, chopped

  • ½ tsp salt

  • ½ yellow capsicum, sliced

  • ½ green capsicum, sliced

  • ½ red capsicum, sliced

  • FOR SABZI:
  • 2 tbsp oil

  • 1 tsp cumin

  • 1 tsp kasuri methi

  • 3 clove garlic, chopped

  • 1 inch ginger, julienne

  • 1 chilli, slit

  • ½ onion, finely chopped

  • ½ tsp turmeric

  • 1 tsp chilli powder

  • 1 tsp coriander powder

  • ½ tsp salt

  • 2 tomato, chopped

  • 2 tbsp tomato sauce

  • ½ tsp garam masala

  • ¼ tsp pepper powder

  • 2 tbsp coriander, finely chopped

Directions

  • Firstly, in a pan heat 1 tbsp butter. add ½ onion, 10 beans, ½ carrot, ½ tomato, 3 tbsp peas and 5 baby corn.
  • Add ½ tsp salt and stir fry on high flame for a minute.
  • Also add ½ yellow capsicum, ½ green capsicum and ½ red capsicum.
  • Stir fry until the vegetables shrink slightly yet remain crunchy. keep aside.
  • In a large wok, heat 2 tbsp oil. add 1 tsp cumin, 1 tsp kasuri methi, 3 clove garlic, 1 inch ginger and 1 chilli.
  • Saute until the spices turn aromatic.
  • Now add ½ onion and saute until onions turn golden brown.
  • Keeping the flame on low, add ½ tsp turmeric, 1 tsp chilli powder, 1 tsp coriander powder and ½ tsp salt.
  • Saute on low flame until the spices turn aromatic.
  • Furthermore, add 2 tomato and saute until tomatoes turn mushy.
  • Now add 2 tbsp tomato sauce and mix well forming saucy consistency.
  • Add in sauteed vegetables. along with ½ tsp garam masala and ¼ tsp pepper powder.
  • Mix well keeping the flame on high.
  • Finally, add 2 tbsp coriander and enjoy veg jalfrezi with roti.

Notes

  • Use Fresh Vegetables: Fresh, crunchy vegetables add to the texture and appeal of Veg Jalfrezi.
  • Adjust Spice Levels: If you prefer a mild version, reduce the red chili powder. For a spicier kick, add a chopped green chili.
