  • 1 lb cooked shrimp, peeled and deveined

  • 1 tablespoon wasabi paste (adjust to taste)

  • 1 tablespoon soy sauce

  • 1 teaspoon rice vinegar

  • 1 ripe avocado, sliced

  • 1 cup sushi rice, cooked and cooled

  • 1 tablespoon sesame oil

  • ¼ cup mayonnaise

  • 1 tablespoon sriracha sauce (optional, for extra spice)

  • 1/4 cup cucumber, julienned

  • 2 teaspoons black sesame seeds (for garnish)

  • 2 teaspoons chopped green onions (for garnish)

Directions

  • In a small bowl, mix together the wasabi paste, soy sauce, rice vinegar, and mayonnaise. Adjust wasabi to taste, adding more if you prefer extra heat.
  • Toss the shrimp in the wasabi mixture and let it marinate for 10 minutes.
  • Meanwhile, heat sesame oil in a pan over medium heat. Add the cooked sushi rice and sauté for 2-3 minutes, until it’s lightly golden and crispy.
  • To assemble: Spoon a small amount of crispy rice into each muffin tin cup (if using a muffin tin) or small serving cups. Press gently to form a cup shape.
  • Top with slices of avocado, wasabi shrimp, julienned cucumber, and a drizzle of sriracha if desired.
  • Garnish with black sesame seeds and chopped green onions.

Notes

  • For a more traditional sushi flavor, add a small slice of nori (seaweed) inside the rice cups.
  • You can also use cooked crab meat instead of shrimp if preferred.
  • To make these gluten-free, ensure your soy sauce is gluten-free.
