1 lb boneless chicken breast, diced
1 lb andouille sausage, sliced
1 can (28 oz) diced tomatoes with juice
1 cup each: chopped onion, bell pepper, celery
2 cups chicken broth
2 tsp oregano, 2 tsp basil, 1 tsp thyme
½ tsp cayenne pepper, 1 tsp hot sauce
2 bay leaves
1 lb shrimp, peeled and deveined
2 cups cooked white rice
Directions
- Add chicken, sausage, tomatoes, onion, bell pepper, celery, broth, and spices to the slow cooker. Stir well.
- Cook on Low for 7-8 hours or High for 3-4 hours.
- In the last 30 minutes, add shrimp and cook until pink.
- Remove bay leaves, stir in cooked rice, and serve hot.
