Ingredients

  • 2 cups cooked butter beans (or 1 can, drained and rinsed)

  • 1 tbsp olive oil

  • 1 small onion, finely chopped

  • 2 garlic cloves, minced

  • 1 can (400g) crushed tomatoes

  • 1 tbsp tomato paste

  • 1 tsp paprika

  • 1 tsp dried oregano

  • Salt and pepper to taste

  • Fresh parsley for garnish (optional)

Directions

  • Preheat oven to 375°F (190°C).
  • Heat olive oil in a pan, sauté onion until soft. Add garlic and cook 1 minute.
  • Stir in crushed tomatoes, tomato paste, paprika, oregano, salt, and pepper. Simmer for 5–10 minutes.
  • Add butter beans and stir to coat. Transfer to a baking dish.
  • Bake uncovered for 25–30 minutes, until thick and bubbly.
  • Garnish with parsley and serve warm.

Notes

  • Add chili flakes for heat or lemon zest for brightness.
  • Great with crusty bread or over rice.
