  • 1 ¾ cups all-purpose flour

  • 1 teaspoon baking soda

  • ½ teaspoon baking powder

  • ½ teaspoon salt

  • 1 teaspoon cinnamon

  • ½ teaspoon nutmeg

  • ¼ teaspoon ground cloves

  • 1 cup granulated sugar

  • ½ cup brown sugar, packed

  • ½ cup vegetable oil

  • 2 large eggs

  • 1 cup pumpkin purée (not pumpkin pie filling)

  • ¼ cup milk

  • 1 teaspoon vanilla extract

  • ½ cup chopped walnuts or pecans (optional)

Directions

  • Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line with parchment paper.
  • In a medium bowl, whisk together flour, baking soda, baking powder, salt, cinnamon, nutmeg, and cloves.
  • In a separate large bowl, whisk sugar, brown sugar, and oil until well combined.
  • Add eggs, one at a time, mixing well after each addition. Stir in pumpkin purée, milk, and vanilla extract.
  • Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Do not overmix.
  • Fold in chopped nuts, if using.
  • Pour the batter into the prepared loaf pan and smooth the top.
  • Bake for 50-60 minutes or until a toothpick inserted into the center comes out clean.
  • Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
