Ingredients

  • 2 Halloumi cheese blocks (about 200g each)

  • 4 sandwich rolls or brioche buns

  • 1 tablespoon olive oil (for grilling)

  • 2 eggs (optional, for fried egg topping)

  • 1 avocado, sliced

  • 1 tomato, sliced

  • Fresh spinach or arugula (optional)

  • Hot sauce or chutney (optional)

  • Salt and pepper to taste

Directions

  • Slice the Halloumi cheese into ½-inch thick slices.
  • Heat a grill pan or non-stick skillet over medium heat. Add olive oil and grill the Halloumi slices for 2-3 minutes on each side, or until golden and crispy.
  • While the cheese is grilling, toast the sandwich rolls or brioche buns in a separate pan or toaster.
  • (Optional) Fry the eggs in a pan to your liking (sunny-side up or scrambled).
  • Assemble the sandwiches by layering the grilled Halloumi, avocado slices, tomato slices, and fresh spinach or arugula on the toasted buns.
  • If using, top with a fried egg for extra richness.
  • Add a drizzle of hot sauce or chutney, and season with salt and pepper.
  • Close the sandwich and serve immediately while the cheese is still warm and crispy.

Notes

  • You can also add grilled mushrooms, roasted red peppers, or sautéed onions for extra flavor.
  • For a spicy kick, consider adding some jalapeños or a spicy mustard.
  • Halloumi sandwiches are great with a side of crispy hash browns or a fresh fruit salad.
