  • 1/2 cup (115g) unsalted butter, plus extra for greasing

  • 6 oz (170g) semi-sweet chocolate, chopped

  • 2 large eggs

  • 2 large egg yolks

  • 1/4 cup (50g) granulated sugar

  • 1/4 teaspoon salt

  • 2 tablespoons (16g) all-purpose flour

  • Cocoa powder for dusting

  • Vanilla ice cream or berries for serving (optional)

Directions

  • Preheat oven to 425°F (218°C). Grease 6 ramekins with butter and lightly dust with cocoa powder.
  • Melt butter and chocolate together using a double boiler or microwave in 30-second intervals, stirring until smooth.
  • In a separate bowl, whisk eggs, egg yolks, sugar, and salt until slightly thick and pale.
  • Gently fold in the melted chocolate mixture, then sift in the flour and mix until just combined.
  • Divide the batter evenly among the prepared ramekins.
  • Bake for 10-12 minutes, until the edges are firm but the centers remain soft.
  • Let the cakes rest for 1 minute, then run a knife around the edges and invert onto plates.
  • Serve immediately with vanilla ice cream or fresh berries.

Notes

  • Prepare the batter in advance, refrigerate, and bake just before serving for a fresh molten center.
  • For a gooier center, bake for 10 minutes. For a firmer texture, extend baking time by 1-2 minutes.
