1 tbsp olive oil

½ cup sour cream
¼ cup mayonnaise
1 tsp Dijon mustard (optional)
½ cup shredded cheddar cheese
4 slices cooked bacon, crumbled
¼ cup chopped green onions
Fresh chives, for garnish (optional)
Directions
- Preheat oven to 425°F (220°C).
- Boil potatoes in salted water until fork-tender (10–12 minutes), then drain.
- Place potatoes on a greased baking sheet and gently smash with the bottom of a glass.
- Drizzle with olive oil, season with salt and pepper, and roast for 25–30 minutes until golden and crispy.
- Meanwhile, in a large bowl, mix sour cream, mayo, and mustard (if using).
- Add roasted potatoes, cheddar, bacon, and green onions. Toss gently to combine.
- Garnish with fresh chives and serve warm or chilled.
