1 cup all-purpose flour
2 tablespoons sugar
2 teaspoons baking powder
¼ teaspoon salt
1 cup milk
1 egg
2 tablespoons melted butter (plus more for the pan)

Directions

- In a large bowl, whisk together flour, sugar, baking powder, and salt.
- In another bowl, whisk together milk, egg, and melted butter.
- Add the wet mixture to the dry ingredients and mix until just combined (a few lumps are fine).
- Heat a non-stick skillet or griddle over medium heat and lightly grease with butter.
- Pour about ¼ cup of batter onto the skillet for each pancake.
- Immediately press a strip of cooked bacon into the center of the pancake.
