  • 1 cup cooked jasmine rice or brown rice

  • ½ cup steamed broccoli

  • ½ cup shredded carrots

  • ½ cup cucumber slices

  • ¼ avocado, sliced

  • 1 teaspoon sesame seeds (for garnish)

  • 1 green onion, chopped

  • 1 teaspoon sriracha or mayo (optional)

Directions

  • Prepare the teriyaki sauce: In a small bowl, mix soy sauce, honey, mirin, sesame oil, grated ginger, and minced garlic. If using cornstarch, dissolve it in 1 teaspoon of water and add it to the sauce.
  • Cook the salmon: Heat a pan over medium heat. Add a little oil, place the salmon fillets skin-side down, and cook for 3-4 minutes. Flip and pour the teriyaki sauce over the salmon. Cook for another 3-4 minutes until the sauce thickens and the salmon is fully cooked.
  • Assemble the bowl: Place cooked rice in a bowl. Arrange steamed broccoli, shredded carrots, cucumber slices, and avocado around the rice.
  • Top with salmon: Place the teriyaki-glazed salmon over the rice and drizzle any remaining sauce over the bowl.
  • Garnish and serve: Sprinkle sesame seeds, chopped green onions, and a drizzle of sriracha or mayo if desired. Serve warm and enjoy!

Notes

  • Adjust sweetness by adding more or less honey to the teriyaki sauce.
