  • 500g boneless chicken (cut into cubes)

  • 2 tbsp oil (vegetable or sesame oil)

  • 1 onion (finely chopped)

  • 3-4 garlic cloves (minced)

  • 1-inch ginger (grated)

  • 2 tbsp peanut butter (smooth or crunchy)

  • 1 cup coconut milk

  • 1 tbsp soy sauce

  • 1 tbsp fish sauce (optional)

  • 1 tbsp honey or brown sugar

  • 1 tsp red chili flakes (adjust to taste)

  • 1 tsp turmeric powder

  • 1 tsp paprika or red chili powder

  • 1 tbsp lemon juice

  • ¼ cup roasted peanuts (crushed, for garnish)

  • Fresh coriander and spring onions (for garnish)

Directions

  • Mix chicken with salt, turmeric, and red chili powder and let it marinate for 10 minutes.
  • Heat oil in a pan and sauté onion, garlic, and ginger until golden brown.
  • Add marinated chicken and cook on high heat until golden brown and cooked through.
  • In a bowl, mix peanut butter, soy sauce, fish sauce, honey, and coconut milk.
  • Pour this peanut sauce over the chicken and mix well.
