1 lb (450g) shrimp, peeled and deveined
2 tbsp vegetable oil
3 cloves garlic, minced
1-inch ginger, grated
1 red bell pepper, sliced
2 tbsp Thai red curry paste
½ tsp red pepper flakes (adjust to spice preference)
¼ cup peanut butter (creamy or crunchy)
1 tbsp soy sauce
1 tbsp fish sauce (optional, for authentic Thai flavor)
1 tbsp honey or brown sugar
½ cup coconut milk or heavy cream
1 tbsp lime juice
2 green onions, chopped
¼ cup chopped peanuts (for garnish)
Fresh cilantro and lime wedges (for garnish)
Directions
- Cook the Pasta: Boil spaghetti according to package instructions. Drain and set aside.
- Sauté the Shrimp: Heat 1 tbsp oil in a pan over medium-high heat. Cook shrimp for 2-3 minutes per side until pink and opaque. Remove and set aside.
- Prepare the Sauce: In the same pan, add remaining oil, garlic, and ginger. Sauté for 30 seconds. Add bell pepper and cook for 2 minutes.
