Ingredients

  • 2 cans (400g each) butter beans (drained and rinsed)

  • 2 tbsp olive oil

  • 3 cloves garlic (minced)

  • 1 tsp dried thyme

  • 1 tsp dried rosemary

  • 1 tsp paprika

  • Salt and black pepper to taste

  • 1 tbsp lemon juice (optional)

  • Fresh parsley (for garnish)

Directions

  • Preheat the oven to 180°C (350°F).
  • In a large bowl, combine the butter beans with olive oil, minced garlic, thyme, rosemary, paprika, salt, and pepper. Stir gently to coat the beans evenly with the seasoning.
  • Transfer the seasoned beans to a baking dish and spread them out in an even layer.
  • Cover the dish with aluminum foil and bake for 20-25 minutes.
  • After 25 minutes, remove the foil and bake for an additional 10-15 minutes, or until the beans are slightly golden and the sauce has thickened.
  • Once out of the oven, drizzle with lemon juice for a fresh, tangy finish and garnish with fresh parsley.
  • Serve warm as a side dish or enjoy with crusty bread for a light meal.

Notes

  • You can experiment with other herbs and spices like cumin or chili flakes to add more depth or heat to the dish.
  • For extra richness, add a handful of grated cheese (like Parmesan) on top of the beans before baking.
