1 tbsp soy sauce

8 oz (225g) rice noodles
1 lb (450g) shrimp, peeled and deveined
2 tbsp vegetable oil
3 cloves garlic, minced
1 small onion, sliced
1 red bell pepper, thinly sliced
2 eggs, lightly beaten
1 cup bean sprouts
¼ cup chopped peanuts
2 green onions, chopped
1 tbsp lime juice
Fresh cilantro and lime wedges (for garnish)
Directions
- Prepare the Noodles: Soak rice noodles in warm water for 10-15 minutes until soft. Drain and set aside.
- Make the Sauce: In a small bowl, whisk together tamarind paste, fish sauce, brown sugar, soy sauce, Sriracha, and red pepper flakes. Set aside.
- Cook the Shrimp: Heat 1 tbsp oil in a wok or large pan over medium-high heat. Cook shrimp for 2-3 minutes per side until pink. Remove and set aside.
- Sauté the Aromatics: In the same pan, add remaining oil, garlic, onion, and bell pepper. Cook for 2 minutes.
